چکیده

Carotenoids are known as provitamin A, while there is an increasing interest in their role as an antioxidants. Anti-cancer activity and other health benefits provided by β-carotene include the protection against cardiovascular disease and cataract prevention, Carrots are one of the best sources of β-carotene. In this paper we have studied the influence of particle size, temperature, solvents, solid is to solvent ratio and extraction time on the extraction yield of β-carotene, and verification of different models and rate kinetics to establish the extraction mechanism. Ethanol, pet ether, ethyl acetate & n-hexane are used as solvent and carrot of cubes of equivalent diameter of 1.077±0.134 cm, 0.801±0.1078 cm & 0.508±.0456cm are used for solvent ratios from 1:5 to 1:60. Temperature was varied from 30 to 50C. Experimental results better fitted in power law model than Peleg model also it obey Pseudo second order kinetic & Intraparticle diffusion model. Extent of color extraction is established by Hunter Lab colorimeter.

A Study for Extraction Kinetics of Β-Carotene from Oven Dried Carrot by Solvent Extraction

The main aim of this work was to study the kinetics of the extraction of β-carotene by solvent (ethanol) extraction from carrots dried at 50oC in an oven. The moisture content after drying was 11±1.5% (dry weight basis). Extraction time was 5 hours and extraction process was carried out at 30oC. The ratio of Carrot (gm): ethanol (ml) of 1:60 was maintained throughout the extraction process. The...

Supercritical carbon dioxide extraction of carotenoids from carrot using canola oil

208 The natural food colorants, carotenoids, are of great importance to human health. The scientists at Department of Agricultural, Food and Nutritional Science, University of Alberta, Canada enhanced the efficiency of SC-CO 2 extraction of carotenoids from carrots, by using canola oil as a continuous cosolvent. The carotenoid content of the starting material was determined by traditional solve...

Investigating the Changes in β-Carotene concentrations of Carrot and Sweet Corn Using Different Methods of Heat Treatments

Carotenoids are red, orange and yellow pigments, which are widely distributed in fruit and vegetables. The aim of this research is to investigate the effect of conventional, high pressure and microwave cooking on the concentrations of β-carotene in carrot and sweet corn. Raw carrots were washed, peeled and diced to a uniform size and then frozen at -70°C. Sweet corn was also provided in a simil...

Supercritical Co2 Extraction of Carotenoids from Carrots and Evaluation of Products

Carotenoids are gaining growing interest in food industries due to their nutritional and colorant properties. The objectives of this study were to extract carotenoids from carrots with supercritical CO2 (SC-CO2) and to evaluate the antioxidant activity of the crude carrot oil extract and color of the carrot residue. Crude carrot oil was extracted from freeze-dried carrots with SC-CO2 at differe...

Pressurized hot ethanol extraction of carotenoids from carrot by-products.

Carotenoids are known for their antioxidant activity and health promoting effects. One of the richest sources of carotenoids are carrots. However, about 25% of the annual production is regarded as by-products due to strict market policies. The aim of this study was to extract carotenoids from those by-products. Conventional carotenoid extraction methods require the use of organic solvents, whic...
